In the case that the lubricant comes in contact with the food & becomes part of the product mix, it is important that it be food grade. Another thing to note is when you are reattaching the rubber boot to the drive shaft, the small bump on the rubber needs to be facing outward, if not the rubber will not seal the drive shaft & keep product out of the machine.
